Harissa Chicken and Tzatziki Tacos

    Pre-heat oven to 200C (fan-bake).

    Heat pan on high, once hot add olive oil.

  3. 3

    Season chicken breast and cook in pan until brown, then flip.

    Meanwhile, grate cucumber, press out excess water, then add to bowl.

  5. 5

    Add garlic and Greek yoghurt to bowl, season to taste and mix.

    Once browned on both sides, transfer to oven-proof dish and cook for 14 mins.

    Add vinegar to pan to deglaze, then add harissa, garlic/ginger paste, honey and a splash of water.

    Combine in pan to make sauce.

    Finely chop coriander.

    Transfer chicken to pan once cooked and shred with forks. Mix chicken into sauce.

    Toast corn tortillas on open flame or in pan, then build your tacos: Tzatziki, chicken, coriander. Enjoy!
