Homemade Pizza Bagels
Recipe for homemade pizza bagels, a mini version of the classic bagel topped with pizza sauce, cheese & pepperoni.

Add yeast to 1/2 cup of warm water and sugar. Let sit for a few minutes until a foamy head develops (~5 mins), then whisk to combine.

Mix salt and flour in a large bowl, then add in yeast mixture. Stir using a sturdy spatula. Keep adding warm water and stirring until you have a dry, shaggy dough. It will probably take 1/2-3/4 cup of water.

Turn out onto a floured surface and knead for 10 minutes. Your dough should be fairly dry and tough.

Move to an oiled bowl, cover with a damp towel, and proof for 1 hour, until doubled in size.

Preheat oven to 425F.

Punch down the dough, then cut into 16 equal potions. Roll each pieces into a ball & pinch together, then roll the seam on a non-floured surface. Use your fingers to poke a hole through the middle.
