Cheesy French Onion Garlic Bread
Topped with a layer of creamy roasted garlic, the best caramelized onion butter, gruyère and mozzarella

Preheat oven to 400˚F.

Heat olive oil in a skillet heated to medium and add the sliced onion and 1 tsp salt. Sauté for 5 minutes, stirring often, until they start to soften. Reduce heat to low. Continue cooking, stirring every 5 or so minutes for 45-60 minutes, until the onions are a deep brown color and very soft.

Deglaze with beef broth every 10 minutes or so – we use about 1 tbsp each time we deglaze. Make sure the heat isn’t too high, otherwise the onions will burn. Low and slow is key here!

Remove from heat and let cool.

Once you get the onions on the stove, slice the top off the head of garlic so the cloves are exposed. Drizzle with olive oil, then wrap in aluminum foil. Roast for 50 minutes, until the cloves are golden brown and very soft.

Reduce oven to 375˚F.

Once the onions are cooled, mix together 1/4 cup of the onions with butter, remaining salt, pepper and thyme.

Spread roasted garlic in a thin layer on the bread, then top with a thin layer of the onion butter. Top with desired amount of gruyere and mozzarella (we do a 50/50 blend).

Bake at 375˚F for ~15 minutes, until the cheese is melty and browned. Let cool slightly before slicing and enjoying.
