A healthier twist on traditional nachos, these sweet potato nachos are loaded with ground turkey, black beans, cheese, and your favorite toppings! Perfect for a family dinner or game day snack.

    Bake Sweet Potatoes (20 minutes): Preheat oven to 425°F. Arrange sliced sweet potatoes on a sheet pan. Spray with avocado oil, season with salt and pepper on both sides. Bake for 15–20 minutes, flipping halfway.

    Cook Turkey (8 minutes): Meanwhile, spray a skillet with oil and sauté onion and garlic for 3 minutes. Add ground turkey and spices. Cook, breaking up the turkey, for 5 minutes until browned. Stir in black beans and cook for 2 more minutes.

    Assemble Nachos (5 minutes): Push potatoes together on the pan. Top with the turkey mixture and sprinkle with cheese. Bake 5 minutes until cheese melts.

    Add Toppings: Top with tomato, onion, cilantro, and drizzle with salsa, guacamole, and sour cream. Serve with lime wedges.


Notes

For crispy sweet potatoes, make sure they’re evenly sliced and not overlapping on the pan. This ensures that every slice gets nice and crispy!
