If you love barbecue pulled chicken sandwiches, try making it into a bowl! This is a flavorful, hearty meal, perfect for a busy weeknight.

    Add the chicken and all the BBQ chicken ingredients into the crockpot. Cook on high for 4 hours or on low for 8 hours. Once done, shred the chicken.

    About one hour before the chicken is done, peel and dice the potatoes. Place them on a baking sheet, drizzle with oil, and toss with all the seasonings. Roast at 425°F for 25 minutes, then flip the potatoes and roast for another 15-20 minutes until crispy and cooked through.

    In a bowl, combine the coleslaw mix and red onion. Add in the mayo, Dijon mustard, apple cider vinegar, lemon juice, and sugar (if using). Season with salt and pepper to taste. Toss to combine.

    In each bowl, layer the crispy roasted potatoes, shredded BBQ chicken, and coleslaw. Garnish with sliced pickles and chopped green onions if desired.


Notes

Pro Tip: Start the chicken in the crockpot in the morning, and by the time you get home, it’ll be ready! All you need to do is roast the potatoes and make the coleslaw. Enjoy!
