If you are a fan of the Costco Chicken Bake, here’s my version that you can make at home! Enjoy!
Ingredients
Optional: If cooking your own chicken
Directions
- 1
Preheat oven to 400°F.
- 2
Place chicken breasts on a baking sheet lined with parchment paper. Season both sides with avocado oil, garlic powder, onion powder, paprika, salt, and pepper. Rub the seasoning into the chicken.
- 3
Bake for 20-25 minutes, or until the internal temperature reaches 165°F.
- 4
Allow the chicken to cool, then dice it into small, bite-sized pieces.
- 5
Prepare the Dough: Allow the pizza dough to rest on the counter for about 1 hour before working with it.
- 6
Make the Filling: In a mixing bowl, combine the diced chicken, chopped bacon, 1½ cups of cheese, and ¾ cup Caesar dressing. Mix well and set aside.
- 7
Assemble the Chicken Bakes: Divide the pizza dough into 4 equal portions. Roll out one portion of dough into a rectangle, approximately 10 inches long and 6 inches wide. Cover the remaining dough pieces to prevent drying.
- 8
Spread one-fourth of the filling down the center of the dough, leaving space around the edges for folding.
- 9
Fold the shorter sides of the dough over the filling first, then fold the longer sides over. Pinch the seams to seal.
- 10
Place the sealed chicken bake seam-side down on a baking sheet lined with parchment paper or a silicone mat.
- 11
Brush the tops of each chicken bake with the remaining ¼ cup of Caesar dressing.
- 12
Sprinkle the remaining cheese on top of each bake.
- 13
Bake at 400°F for 18-20 minutes, or until golden brown. Enjoy!
