Stuffed Bell Pepper Soup
Warm up this fall with my cozy and hearty stuffed bell pepper soup! Inspired by one of my favorite childhood meals, Moldovan stuffed bell peppers, this comforting soup is perfect for chilly weather and will quickly become your go-to for soup season!

Heat butter and oil in a large pot. Add diced onion, carrot, and garlic. Sauté for 3 minutes until softened.

Add diced bell peppers, season with ½ teaspoon salt and ¼ teaspoon black pepper, and sauté for 8 minutes.

Stir in tomato paste and cook for 2 minutes.

Add ground turkey, season with 1 teaspoon salt, garlic powder, and paprika. Sauté for 5 minutes, breaking up the meat.

Pour in crushed tomatoes and chicken stock. Add bay leaves and sugar. Bring to a gentle boil.

Stir in rice, oregano, basil, and 1 teaspoon salt. Simmer for 10 minutes, stirring occasionally.
