Simple Turkey Meatball Soup

    Prepare the Meatballs: In a bowl, combine the ground turkey, grated onion, egg, salt, and black pepper. Mix until well combined. Transfer the mixture into a piping bag and set aside for later.

    Start the Soup: In a large pot, heat the butter and oil over medium heat. Add the diced onion and sauté for 3 minutes until softened. Add the chopped potatoes, bay leaf, and water. Season with chicken bouillon powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a boil and cook the potatoes for 5 minutes.

    Add the Rice: Add the rice to the pot and continue to cook for another 5 minutes.

    Form the Meatballs: Cut the tip of the piping bag so the mixture can be easily squeezed out. Pipe the meat mixture onto a spoon to form small meatballs and drop them directly into the soup. Alternatively, you can skip the piping bag and form the meatballs by hand. Add all the meatballs to the soup.

    Cook the Meatballs: Bring the soup to a simmer and cook for 10 minutes, allowing the meatballs to cook through.

    Finish the Soup: Stir in the chopped dill, mix well, and turn off the heat.

    Serve: Ladle the soup into bowls and serve with a dollop of sour cream and a side of bread.
