    Marinate the Chicken: In a bowl or ziplock bag, combine chicken, 2-3 tbsp olive oil, juice of 1 ½ lemons (save the other ½ for slicing), 1 ½ tsp rosemary, garlic, 1 ½ tsp salt, and ½ tsp pepper. Marinate overnight or for at least a few hours.

    Prepare the Vegetables: Preheat oven to 400°F. On a baking sheet, toss potatoes, carrots, and onion with 2-3 tbsp olive oil, 1 ½ tsp rosemary, 1 tsp salt, and ½ tsp pepper.

    Assemble & Bake: Place marinated chicken on top of vegetables. Pour any remaining marinade over the chicken and vegetables. Slice the remaining ½ of the lemon and arrange slices around the pan. Bake uncovered for 50-60 minutes or until chicken is golden and fully cooked and potatoes are fork tender.
