Mix all ingredients for sauce

Chop your vegetables & mince garlic and ginger

Add olive oil to a pan and cook the ground chicken. I like to let it cook for a minute undisturbed to get a bit of a sear on the chicken and then break up into pieces. Remove when cooked about 5-6 minutes.

Add a bit of olive oil and cook the zucchini and try to get a dark sear. Then add the onions and peppers. Cook about 2 minutes.

Add in cooked chicken and sauce.

Mix well as the sauce thickens. Then remove from heat.

Serve over rice.
