    Shred rotisserie chicken

    Shred cheddar cheese

  3. 3

    Cut onions

    Mix enchilada sauce and buffalo sauce

  5. 5

    Season shredded chicken with 1/2 cup sauce (more if needed), 1/2 cup cheese and 2 tablespoons onion. Mix well adjust as needed.

    Roll each tortilla with 2 tablespoons of chicken mixture

    Pan spray a baking dish and add some sauce to the bottom of the pan.

    Add the rolled tortillas.

    Top enchiladas with sauce, cheese, onions.

    Bake at 350 degrees F for about 10-15 minutes until cheese is melted and bubbly.
