Greek Chicken & Potatoes Over Tzatziki

    Cut potatoes into quarters.

    Mix all seasoning for chicken in a bowl.

    Add the potatoes to an oven safe dish and season with salt and pepper. Then tuck the chicken thighs in with the potatoes.

    Pour the yogurt mixture over the chicken and potatoes and massage it well on all sides.

    Cover with foil and bake at 375 degrees F for 20 minutes and then remove the foil and continue baking for another 20-25 minutes.

    While the chicken is baking, make your tzatziki.

    Shred your cucumber, then put into a clean cloth towel squeeze out all access water, do this 2 to 3 times.

    To a small bowl and plain Greek yogurt, shredded cucumber, grape yogurt, garlic, add lemon zest and lemon juice, salt, and pepper.

    When you are ready to serve first plate, the tzatziki on your plate and then add the chicken and potatoes. Enjoy.
