    Make your sauce: mix all ingredients in a bowl until well combined. Set aside in the fridge.

    For the onions, slice them ½ inch thick. Heat a pan on high, once hot add oil then the sliced onions. Add something to weigh them down. Cook for about 3 minutes, then flip and cook for 2 more minutes. Season with salt, remove from the pan and set aside.

    Form the beef into 2 ½ oz balls.

    Heat a cast iron pan over high until smoking hot. Add a little oil then a ball of beef. Smash to a ¼ inch thin, season with salt & pepper. Flip once browned, add the cheese, let melt then remove.

    On a toasted bun add sauce, onions, patties, chopped chillies, more onions then the top bun. Enjoy!
