Steak & Frites, served with garlic, lemon & parmesan courgettes and a homemade peppercorn sauce

For the peppercorn sauce

    Start by peeling and slicing your potatoes into frites shape

    Add to a mixing bowl and combine with a little oil and a pinch of salt

  3. 3

    Add them into the air fryer on 200 for 20 mins

  4. 4

    Pat the steak dry, season with salt on both sides

  5. 5

    Get your pan nice and hot, add some oil - I love cooking steak with my stainless steel pan for even cooking

    Add the steak into the pan and sear on both sides until brown (around 2-3 mins on each side)

    Pop the pan in the oven on 180 for around 8 mins to continue cooking the steak

    Add courgettes into a separate pan, with olive oil (or butter for a better flavour)

    Add in grated garlic, grated Parmesan, lemon juice & some pepper. Combine until courgettes are cooked but still crunchy

    Meanwhile start your peppercorn sauce

    Add the butter into a pan until melted

    Whisk in the flour (cook out for 1 mins until biscuity)

    Add the brandy and whisk through before adding the milk and then the chicken stock gradually

    Stir in the peppercorns and then whisk until you have the right consistency (if it’s too thick, add more stock)

    Remove the steak from the oven and let it rest whilst you prep the rest

    Remove the frites from the air fryer add to a mixing bowl with a teeny bit of olive oil and some more salt to taste. Be careful not to overdo it with the salt.

    Slice the steak and serve up on a plate with the courgette and frites - pour over that peppercorn sauce & enjoy!
