One of my favourite dinners and actually very simple to make, especially with these Japanese curry blocks but definitely prefer making it from scratch.

    Flatten the chicken breast.

    Dip in flour and egg then Panko breadcrumbs.

  3. 3

    Pop on a baking tray and drizzle in olive oil.

  4. 4

    Bake in the oven for around 20-30 mins, or until golden and cooked through.

    Cook your curry sauce to packet instructions (or if you want the from scratch recipe, let me know).

    Peel your cucumber, add salt, vinegar and soy- set aside in the fridge until the chicken is cooked through.

  7. 7

    Slice your crispy chicken.

    Serve up with some rice & enjoy!
