ROASTED SQUASH/BEETS WITH FIG AND BALSAMIC BOWL

A versatile and healthy meal combo with roasted squash and beets, figs, and balsamic glaze.

Ingredients

Directions

    Pre roast the squash and beets.

  2. 2

    Wash and cut the rest of the veggies.

  3. 3

    Add arugula and endive to a bowl, toss with some balsamic and olive oil, salt and pepper.

  4. 4

    Add your protein of choice, squash, beets, figs, kraut, seeds, nuts, and onions to a bowl.

  5. 5

    Drizzle with some balsamic glaze and maybe some tahini!

Fun fact: the beets and endive are great liver supporting foods!
