LOX STUFFED MINI SWEET BELL PEPPERS

These lox stuffed mini peppers are a fun appetizer to bring to any brunch, lunch, or even dinner!

    Start by washing your peppers, then slice the top stem off and slice in half lengthwise.

    Repeat the same for the cucumbers and also scoop out the seeds.

    Finely chop the shallot, dill, chives, and capers.

    Dice the lox.

    Add all of those to a mixing bowl, then add ground black pepper, a good squeeze of lemon juice, and the cream cheese. Mix well to combine.

    Salt to taste, then scoop into your pepper halves and cucumbers. Use the back of a spoon to evenly distribute it.

    Once all are filled top off with additional chopped dill and chives.

    Serve immediately and enjoy!
