Hatch Chile Beef Soup/Stew

A hearty stew perfect for fall

    Season meat, dust with flour.

    Set instant pot to Saute, let it heat up.

    Add avocado oil in instant pot.

    Add onions, saute until translucent.

    Add garlic, saute for 1 minute.

    Add beef to pot.

    Sauté until seared.

    Turn off.

    Deglaze pot with a bit of broth, scraping bottom to loosen bits, then add the rest of the broth.

    Add roasted hatch chiles, bay leaves and oregano. Mix to combine.

    Set to pressure 20 minutes. Allow for a natural pressure release for 15 minutes.

    Release pressure

    Add potatoes, tomatoes, and beans.

    Adjust seasoning, garnish with cilantro, parm, serve with crusty bread.
