Heat oil in frypan over medium heat.

Add zucchini, sauté until golden then separate into 3 round piles.

Make a small well in the centre of each.

Dollop in a generous tbsp of pesto in each, then crack an egg on top.

Cover and cook for a few minutes or until the set but the yolks still runny.
- 6
Remove from head, sprinkle with salt and drizzle with chilli oil if using.
