Ceviche Wonton Tacos

Directions

    Preheat oven to 190C.

    Lightly spray both sides of each wonton wrapper with olive oil.

  3. 3

    Turn a 12 hole muffin pan upside down and place the wonton in between 2 muffin cups to create a taco shell.

    Bake for ~3-4 minutes then remove to reshape while the wontons are still flexible.

    Return to oven and bake for another ~5 mins until golden.

  6. 6

    Allow to cool.

    Mix together all ingredients for the sauce until well combined.

  8. 8

    Place all ceviche ingredients into a mixing bowl and stir well.

  9. 9

    Spoon into taco shells, drizzle the spicy sauce over tacos.

  10. 10

    Top with coriander if using.
