One Pot Chicken and Rice Porridge

    Heat oil in a pot then add garlic, shallots and ginger. Cook for 2 minutes until aromatic.

    Add chicken thighs and cook for 3-4 minutes per side until it starts to turn brown.

    Add chicken stock/water and let it come to a boil, then simmer for 20 minutes.

    Remove the chicken and shred the meat off the bones.

    Toss the bones back into the pot to add more flavor to your stock.

    Rinse the rice under cold water.

  7. 7

    Add rice, shredded chicken and cook until the rice is soft (about 20 minutes).

    Taste and adjust the soup to your liking.

    Serve with your favorite condiments and top with cilantro and green onions.
