Vietnamese chicken soup with bean thread noodles

    Boil the chicken for 1 hour with the charred onion, ginger, chicken soup base and fish sauce.

    Remove chicken and shred the meat off the bones.

    Add shiitake mushrooms and simmer for another 10 minutes.

    Soak the bean thread noodles in boiling water for 30 seconds then drain and rinse with cold water to stop the cooking process.

    Serve noodles with soup and add condiments to your liking.
