Firecracker Shrimp with Sweet Chili Sauce

    Peel and devein 1 lb of shrimp. Cut shallow slits to bottom side of the shrimp to elongate the shrimp.

    Season with 1/2 tsp salt and 1/4 tsp of white pepper.

    Use small spring roll wrappers and fold in one corner and then roll. Roll the shrimp in the spring roll wraps and seal with water or egg white.

    While the spring roll wraps are not in use, be sure to cover them with a damp cloth to prevent them from drying out.

    Fry until golden brown and crispy and serve with sweet chili sauce.
