Tuscan Chicken Ragu Tagliatelle
Tuscan chicken is one of those dishes where minimal ingredients come together to make something really special

Fry the shallots in some of the oil from the sun-dried tomatoes till soft

Add in the chicken mince and spices, cook till no pink bits remain

Pop the pasta on to boil

Add in chopped jarred peppers and sun-dried tomatoes, cook for two minutes then add cream, tomato purée and parmesan, let this melt together

Drain the pasta but keep back some cooking liquid and toss this through the ragu alongside the spinach

Plate up with extra parmesan if desired
