Caribbean Coconut Chicken Curry
A super simple creamy curry packed with warming Caribbean curry spices

Fry the chicken in 1/4tsp oil until the outside is sealed, remove from the pan

Add in the onions, potatoes and peppers and fry in 1/4tsp oil till starting to soften

Add back in the chicken, curry powder and coconut milk and let this simmer for 20-30minutes

Stir through coriander, yoghurt and a dash of lime juice, finish with some salt and pepper
