Njuda Halloumi Rice

This dish packs a ton of flavour, I’m late to the Njuda party but now I’ve discovered it I’m obsessed!

    Fry the onion and peppers in oil for a few minutes then add in rinsed rice, continue to cook for a few minutes.

    Add in the seasonings, passata, 350 mls chicken stock and let this cook until the liquid has been absorbed.

    Dry fry the halloumi till coloured on both sides, add in the Njuda to coat and get sticky.

    Plate up the rice, top with halloumi and a dollop of yoghurt and hot sauce if you fancy.
