Chipotle Chicken Chorizo Mac n Cheese
A spicy little twist on the classic Mac n cheese

Fry off the chorizo until it’s released its oils then remove and set aside, fry off the onions and peppers, then add garlic and chicken and continue to cook for five minutes

Add tomato purée, chipotle paste, paprika, cumin, salt, pepper and 200 ml of water and cook till sauce has reduced, then add back in the chorizo

Boil the macaroni

Melt butter and flour together and cook for three minutes until paste has formed, slowly add in the milk bit by bit then add the cheese, cream cheese, and pasta, giving it a good stir, loosen with pasta water if necessary

Plate up your mac & cheese with a good dollop of the chicken chorizo mix on top
