Gluten & Dairy Free Key Lime Pie
A gluten & dairy free version of my famous key lime pie recipe.

Blend the nuts until fine crumbs. Add in your melted butter and coconut sugar and add it in to a pie dish and press in to shape. Bake at 375F for 10-12 minutes.

In the bowl of a mixer with the whisk attachment, add in your 6 egg yolks and whisk until pale yellow. Then add in your can of condensed oat milk and mix until combined. And add in your lime juice slowly while whisking and then the zest of one lime.

Add the filling in to the mixture and bake for 10 minutes to set the eggs. Then leave to cool completely and pop it in the fridge for a few hours or overnight.

Once ready to serve, whip your coconut cream and add over the pie and add over some extra zest. Enjoy!
