Prepare the Peach Layer: If using fresh peaches, peel and dice them, then toss with sugar if desired. For canned peaches, simply drain and dice them.

Assemble the Parfaits: In clear cups or jars, layer the ingredients: start with a layer of crumble topping, followed by a layer of the cheesecake mixture, and then a layer of peaches. Repeat the layers until the cups are filled, finishing with cheesecake on top and sprinkling extra crumble and peach slices for garnish.
