    If roasting your own beets, preheat the oven to 400°F (200°C). Wrap the beets in foil and roast for 45-60 minutes until tender. Let cool, then peel and cube.

    In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.

    In a large bowl, combine the roasted beets, diced avocado, mixed greens, and toasted walnuts.

    Drizzle the dressing over the salad and toss gently to combine.

    Top with crumbled feta cheese and serve immediately.
