    Marinate the Chicken: In a large bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper. Add the chicken breasts to the marinade, ensuring they are well-coated. Let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

    Cook the Chicken: Preheat your grill or stovetop skillet over medium-high heat. Lightly grease the grill grates or skillet. Remove the chicken from the marinade and discard the marinade. Grill or sear the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F or 74°C). Remove from heat and let rest for a few minutes.

    Make the Avocado Cream Sauce: In a food processor or blender, combine the ripe avocado, Greek yogurt, lime juice, minced garlic, cilantro or parsley, salt, and pepper. Blend until smooth and creamy. If the sauce is too thick, add a little water to achieve your desired consistency. Taste and adjust seasoning as needed.

    Serve: Slice the grilled chicken and arrange it on a serving platter. Drizzle the avocado cream sauce generously over the chicken or serve it on the side. Garnish with additional fresh herbs or lemon slices if desired. This dish pairs wonderfully with a fresh salad, quinoa, or rice.
