Prawns, Snow Peas, Pesto & Feta Salad

    Bring a large pot of water to the boil, lightly seasoned with salt. Blanch the greens for 30 seconds then refresh in ice water and drain well.

    Place a medium frying pan over a high heat, add 2 tbsp olive oil, the garlic and prawns and cook for 30 seconds then add the tomatoes, season well and add the lemon zest.

    Stir fry for 1 minute then remove from the heat.

    Combine the cooked greens, prawns & things from the pan, pesto, herbs, remaining olive oil, juice 1/2 lemon & season to taste. Toss gently then finish with the feta to serve.
