Chicken Cacciatore with Potato Gratins
Perfect for any night of the week and very leftover approved!

Season the skin side of the chicken thighs then flip and season the skin side, also sprinkling over the Italian herbs.

Place a large frying pan over a high heat and add the olive oil and chicken, skin side down. Cook for approx. 2 minutes then flip and remove from the pan.

Add the onion, garlic, capers and anchovies to the pan, cook for 2 minutes, to soften then add the basil leaves and tomatoes along with the marinated pepper and 1 cup water. Bring to a simmer, season to taste then nestle in the chicken and potato gratins.

Transfer to the oven to cook for approx. 30 minutes then allow to cool slightly. Scatter with basil to serve.
