Stepping up my breakfast game with these Hashbrown Waffles, Burrata, Tomatoes & Prosciutto … the crisp potato waffles are a next level hack that you’ll have on repeat!

    For each waffle, place 2 hash browns together in a waffle mould to cook until crisp. Repeat with remaining hash browns to make 4 waffles. Season them with a little salt.

    Toss the tomatoes with the olive oil and a little salt & pepper. Roast for 8-10 minutes until bursting.

    Whip the burrata with a fork and spoon over the waffles. Spoon over the tomatoes, any juices from the tray, then drape over the prosciutto. Finish with parsley and grate over some parmesan.
