    Roast the peppers at 200°C for around 25 minutes, allow them to cool, then remove the stalks, skins, and seeds.

    Blend with the egg yolk, garlic, Dijon mustard, and vinegar, streaming in the vegetable oil to make a mayonnaise, season to your taste with salt.

    To make the pesto, simply blend the basil, garlic, pine nuts, Parmesan, and lemon with salt, pepper, and olive oil.

    Spread the bottom of the focaccia with the mayo and the top with pesto, then layer up with the cold cut meats, mozzarella, slices of tomato (season with salt and pepper), then finally the salad leaves, olive oil, and vinegar.

    Press with something heavy for 30 minutes before slicing.
