Quick and Easy High Protein Chilli Loaded Fries
A great weekend dish for you and your partner to share.

Prep your fries by chopping your potatoes and then parboil your fries for 8-10 mins.

Whilst those are parboiling, chop your onion and fry this in a pan with olive oil.

Then once these have softened add your mushrooms and then your 2 garlic cloves crushed.

After this add your mince and then season with salt and pepper.

Once your mince has browned add your chopped tomatoes (swill the can with water and add a bit more liquid) and then your spices, paprika, cumin and chilli powder. You can spice to your own preference here.

Once you’ve done this add your kidney beans and then season again with salt and pepper and bring to a simmer.

Then when your fries are parboiled. Get them in the oven at 180c for 20-25 mins or until brown.

When both the chilli has simmered and you’ve seasoned to your liking and the fries are done, place the chilli on top of the fries as I’ve done in the video and then add grated cheese on top.

Back in the oven for 3-5 mins so the cheese can melt, top with coriander and you’re done.
