    Lay the bacon rashers onto a parchment lined tray and bake in a 180C oven for 20-25 mins until crispy. Set aside.

    Blanch the corn cobs in boiling water for 1-2 mins then drain. On a bbq, a gas hob or with a blowtorch, char the corn then remove the kernels from the cob. Set aside.

    Blitz all dressing ingredients, taste for seasoning and set aside.

    Arrange all veg into a bowl, crumble over the bacon bits and pour over the creamy dressing. Tuck in & enjoy!
