Salted Caramel Ice Cream (GF / DF)

One of the most incredible things I’ve ever tasted. This ice cream is entirely dairy free and the caramel swirl has only three ingredients.

Directions

    To make ice cream base, add egg yolks, vanilla extract, sugar and salt to a medium sized bowl and whisk well.

    Heat coconut cream and coconut milk in a small sauce pan over medium low heat until just warm.

    Remove from heat and slowly add half of the cream mixture into your eggs while whisking.

    Transfer the egg mixture back into your sauce pan with the remaining cream over low heat.

    Allow cream mixture to just start to come to a simmer, stirring constantly to prevent scorching, then turn off heat.

    Stir in honey then transfer to Creami container.

    Freeze for 24 hours and follow instructions on Creami to mix into ice cream.

    To make caramel sauce, bring coconut milk and coconut sugar to a simmer over medium heat.

    Reduce heat to medium low and allow sauce to simmer and thicken for 15 minutes.

    Turn off heat and let caramel cool completely before swirling into ice cream.

    To mix caramel into ice cream, layer half of your ice cream on the bottom of a medium sized container.

    Drizzle generously with caramel sauce then top with remaining ice cream.

    Drizzle once more with caramel then use a knife to swirl sauce into ice cream.
