Caramelized Onion & Mushroom Chicken
A high protein meal with a nourishing bone broth sauce that goes great with your favorite veg, grain or potato side.

To caramelize onions, heat ¼ cup olive oil in a pan over medium heat. Add onions, reduce heat to medium low, cover and let cook for 15 minutes.

Remove the lid and continue cooking, stirring periodically to prevent onions from browning too quickly. Onions should change color from white to light golden in about 30 minutes.

Add in mushrooms and thyme and saute until mushrooms have softened and cooked down slightly, about 10 minutes.

Transfer onion and mushroom mixture to a bowl and set aside. Combine arrowroot with 2 tbsp water and whisk well to make a slurry.

Season chicken breasts generously with salt and pepper and add 2 tbsp olive oil to the same pan over medium heat. Add chicken and cook until just cooked through and golden brown on both sides, about 5-7 minutes per side.

Remove chicken from pan and set aside for later. Deglaze pan with bone broth then stir in arrowroot slurry. Return mushroom mixture to pan and season to taste with salt and pepper.

Reduce heat to medium low and allow sauce to thicken and reduce until thick enough to coat the back of a spoon, about 5-10 minutes, then return chicken to pan and coat in mushroom sauce before serving.
