One Pot Orzo with Chicken Meatballs

Combine chicken, salt, Italian seasoning, parsley, garlic, eggs, panko, and milk in a large bowl and mix well.

Oil hands well with olive oil then shape into medium-sized meatballs.

Heat 2 tbsp olive oil in a large skillet over medium heat. Add meatballs to hot oil in batches and cook until golden brown on all sides.

Remove meatballs from pan and set aside on a paper towel-lined plate.

Add shallot to pan and sauté until translucent, about 2 minutes before adding garlic and orzo.

Sauté for one minute longer then pour broth over orzo and mix well.

Cover, reduce heat to low and allow orzo to cook until broth has been absorbed and orzo is tender, stirring regularly.

Stir in tomato sauce and fresh basil. Return meatballs to pasta with sauce and bring to a simmer then turn off heat and garnish with fresh parsley before serving.
