Honey & Olive Oil Cornbread Muffins

This is truly the best cornbread I’ve ever had and will be a staple for us throughout the holiday season!

    Preheat oven to 400°F.

    Combine eggs, milk, olive oil and honey in a large bowl and mix until thoroughly combined.

    Add in flour, cornmeal, baking soda, baking powder and salt and mix until batter is smooth and no clumps remain.

    Divide batter evenly into baking cups or pour into a greased a 9x9 baking dish and bake for 20-25 minutes until a toothpick stuck into the center of the muffin comes out clean.

    Allow muffins to cool slightly before eating.
