To make caramel sauce, bring coconut milk and coconut sugar to a simmer over medium heat.

Reduce heat to medium low and allow sauce to simmer and thicken for 15 minutes.

Turn off heat and let caramel cool for about 15 minutes.

Spear apples with candy apple sticks then roll in caramel sauce.

Place on baking sheet lined with a silicone mat and allow caramel to set slightly and stop moving before rolling in desired toppings.
