Bacon Jam Salmon Pinwheels

These are packed with so much flavor and the salmon comes out perfect.

    Fry up half a pound of cut up bacon in a skillet then remove when crispy.

    Cook up one diced onion, until softened, then add the bacon back in with 1/4 cup apple cider vinegar, 1/4 cup brown sugar, 1/4 cup Maple Syrup, and 4oz bourbon.

    Cook until thickened then let it cool down.

    Spread one block of softened cream cheese on the salmon, then add enough bacon jam to cover the cream cheese.

    Roll the salmon up nice and tight, then secure with twine and cut into individual steaks.

    The outside with your favorite barbecue rub.

    Cook at 350F for 30 mins then glaze with Maple syrup at the end.
