Form 4x ½ lb beef patties then season with a burger rub.

Cook the bacon until crispy, then grill the burgers over direct heat.

Remove once the bacon is crispy and the burgers reach 155°F internal then chop up in the bite-size pieces

Fry up a large diced onion and remove once soft.

Assemble the queso with 16oz queso Blanco, 8oz Colby Jack cheese, fried onions, one can rotelle tomatoes, burger, bacon, one cup of milk, one pack of ranch seasoning

Smoke the queso at 375 for 30 minutes during every 10 minutes
