Ingredients

Directions

  1. 1

Pre heat oven to 300 degrees

  2. 2

Fry bacon until crispy in oven or a heavy skillet. Transfer to paper towel. Once cooled, cut bacon into small pieces and crumble. Set aside.

  3. 3

In a blender or a food processor, add all custard ingredients. Blend for about 30 seconds.

  4. 4

Pour the egg custard in to a measuring cup with a spout.

  5. 5

Place a 12 cup silicone pan on a baking sheet. Lightly spray the cups with avocado oil.

  6. 6

Pour the egg batter into the cups about 3/4 way up. Any remaining batter can be equally distributed in to the cups.

  7. 7

Sprinkle on the bacon to each cup and press down with the back of a spoon to ensure that the bacon is baked inside the bite and not just on top.

  8. 8

Transfer the pan to the preheated oven. Carefully pour the boiling water to the bottom of the baking sheet creating a water bath.

  9. 9

Bake for 30 minutes at 300 degrees.

  10. 10

Remove from oven and allow to cool for about 5 minutes before removing egg bites from the pan. Once removed, serve immediately.

  11. 11

Refrigerate for 2 days or freeze (wrapped airtight) for about 1-2 months. Re heat in airfryer for about 5-6 minutes at 350 degrees.
