Add all the ingredients, except the halloumi, to the slow cooker. Add 1.2 litres of boiling water or stock, then cook on high for 3 hours or low for 6 hours.

Blitz the soup in the slow cooker with a hand blender until smooth and season with salt and pepper.

Pan-fry or air-fry the halloumi until golden all over, then scatter the halloumi pieces like croutons over the soup in bowls to serve.
