Ingredients: 8 thick pork sausages; 750g baby potatoes (chopped into small chunks); 1 white onion (chopped); fresh rosemary (finely chopped); 1 tbsp olive oil; salt and pepper; fresh herbs (optional); 2 tbsp Dijon mustard; 2 tbsp honey; 1 tbsp olive oil; salt and pepper

This is one basket or one tray meal perfect for rustling up after work, just throw it all in. Serve with veg on the side, I just had none in my fridge😅

For the honey mustard sauce

Dice the baby potatoes into small chunks and chop the onion, then place them in a bowl. Drizzle with olive oil, season with salt and pepper, and add fresh rosemary. Then pop your potato mixture into the air fryer basket or oven tray and add your sausages on top.

Create your honey mustard dressing by mixing all the ingredients above and pour over the sausage & potato mix, making sure everything is evenly coated

Airfry for 20-25 minutes at 190 giving it a shake halfway through and turning the sausages so they cook evenly both sides
