Quick Mushroom Pasta
A comforting and delicious meal for those cozy weeknights

Bring to boil water for the pasta.

In a big pan, add extra virgin olive oil, garlic and chili flakes (optional) cook on low for 2 or so minutes.

Then add the Mushrooms and let cook on medium low for 5-8 minutes, stirring so the cook evenly.

Add salt, pepper and some of the fresh parsley.

When they are reduced in volume add the wine and let it evaporate on medium high heat.

Make the cream: in a blender or food processor add 1/3 cup of the cooked mushrooms, 1/3 cup Pecorino cheese (or more if you'd like), a handful of parsley, black pepper, pasta water and blend until creamy.

Lower the heat, add the pasta al dent as well as the mushroom cream and finish cooking adding some pasta water when necessary.

Once ready, turn of the heat add the rest of the parsley, cheese and enjoy!
