Cacio e Pepe with Crispy Pancetta Grilled Breakfast Sandwich

This is our take on the famous Roman dish cacio e pepe.

    Crisp up the pancetta in a pan without adding any oil. Place it on some paper towels and set aside.

    Mix eggs, milk, and seasoning. Cook with some butter on low and gently stir continuously scrambling until they are 80% cooked and then turn heat off.

    Add butter on the side of the bread that will be toasted, add eggs, cheese, crispy pancetta, the other slice of bread. Spread some butter, sprinkle some Pecorino (optional) and then toast each side until golden brown. Sprinkle some flaky salt and serve.


Notes

Use your judgment for the amount of cheese to add. Pancetta can be substituted with bacon if that's what you have. Easy to recreate with gluten-free bread, making sure it's gluten-free certified, as well as the seasonings.
