Smoky Roasted Tomato Soup

This is a Smoky Roasted Tomato Soup that tastes amazing. It’s incredibly simple to make, just blitz up roasted tomatoes and garlic with vegetable stock. It has a lovely hint of smoky flavour from smoked paprika.

    On a baking tray, place the tomatoes skin side down, then add the garlic, onions and basil. Drizzle with olive oil, dust the top of the tomatoes with smoked paprika and season with S&P. Place into a preheated oven at 210°C for 20 minutes or until the tomatoes are slightly charred.

    Pour the hot stock into a food processor or use a hand blender then add the tomatoes, the rest of the basil and butter then blitz until smooth.
